Wild Women Expeditions
Outdoor Vacations For Women

Wild Women Expeditions is Canada's leading outdoor adventure company for women. They offered that, "Through a recipe lies allure".

Here is one of many recipes from, "Recipes for Wild Women—a Canoe Trippers' Cookbook and Guide," by WWE director, Beth Mairs and guide J. Wallace. It is available on their website at wildwomenexp.com.

PAD THAI
A wonderful dish to serve up after a long day of paddling because it is fast and easy.  Unless you are growing the sprouts on the trip this is a dinner which is best served early on in the trip- we recommend day one or day 2 to be safe (because of the spoiling nature of mung beans and scallions).


Pack:

2 bunches of scallions (green onions dummy!)

3 cups mung bean sprouts
8 cloves of garlic

2-3 inches of gingeroot
3 cups of unsalted peanuts packed like this: double-bagged in strong

plastic bags.

4 limes
1/3 cup of red wine vinegar
cooking oil- like corn or canola
spices: cayenne.

In a frying pan, add a little cooking oil and lightly saute the scallions,
garlic, and gingeroot with 2 tablespoons cayenne. Crush the peanuts. A local rock is great for this. Ask someone who is missing out on their aggression therapy session because of the trip. Quarter - 4-5 limes.

Put a large pot of water on to boil. When boiling, add 2  packages rice noodles. Watch them- they only take 3 minutes!

Optional: When noodles cooked and drained*, break a raw egg or 2 and throw in the mixture, stirring it in quickly.  Add sauteed mixture, then bean sprouts, crushed peanuts, squeeze limes. Make up mixture of red wine vinegar  - throw in  - to TASTE. Add more cayenne to taste.

* ha ha! draining rice noodles is an act of group trust which if done successfully can win the drainer a highly 'e-steamed' (sic.) place of honour in the group or if done unsuccessfully can turn into an episode of group scapegoating . Chose someone who is naturally masochistic for this job or has a saviour complex. What we are saying is , it is easy to lose some or all of your noodles in the draining process. BONUS! THIS MEAL IS VEGAN  FRIENDLY ( if you forgo the egg) AND GLUTEN-FREE.
