Tour Host Pick of the Month... Cuisine International Cuisine International: The name says it all. While many culinary tour companies focus on safe and known destinations like France and Italy, Judy Ebrey, president of Cuisine International, seeks out schools that offer fantastic foods from little-known cuisines. Take this month’s recipe for Brazilian Pork Roast, created by Yara Castro Roberts of the Brazilian Academy of Cooking. It’s a savory combination of marinated pork, stuffed with fruits and vegetables, and served with fried pineapple. I can’t wait to cook up this mouth-watering creation as the main dish for my holiday gathering. Judy said her family loved it last year. Keeping with her desire to find new regional cuisines and her love of South America, Judy has plans to bring on more schools from this undercharted destination. Currently she is looking into Ecuador and Peru for next year’s offerings. Don’t think that Cuisine International is remiss in its European offerings. With schools in France, Italy, Portugal, and even England (Judy can find great schools anywhere!), Cuisine International covers the traditional as well as discovering the next great wave in international cookery.
